When in Doubt, Smell First Your nose is the most reliable diagnostic tool for fermented beverages. Before tasting anything from a questionable batch, smell it carefully. A batch that smells genuinely off should not be tasted. Fermentation gone wrong can produce acetic acid, butyric acid, or other compounds that are unpleasant but not dangerous, but contamination with pathogenic organisms is also possible in an unsanitary process. Err on the side of caution and start fresh.
