🌶 Sprinkling Chilli Flakes

• 400g can Chickpeas

🍗 1 Chicken Stock

🍞 To serve Crusty Bread

Treat the Tinned Tomatos as the lead, not a footnote. Source the best you can find and the dish lifts itself.

Cheap pans are fine. Heavy bottoms matter, brand names do not. A solid cast iron will outlast you.

Render the fat slowly before any colour goes on the meat. Rushing this step gives you grey meat sitting in a pool of oil.
