## Æbleskiver

The Scandinavian dough balls that look like spheres but started as wedges. Cooked in a cast iron pan with seven hemispherical wells, turned with a knitting needle, served at Christmas markets across Denmark, Norway and southern Sweden.

Plain flour, the structural base

0%

Buttermilk, for the lift

Cardamom, the unmistakable Nordic note

Egg, separated yolks and whites

Raspberry jam, the traditional filling

Powdered sugar, dusted heavy at the table

Total time

30 minutes

Serves

4

Difficulty

Moderate, needs the pan

Origin

Scandinavia, Christmas markets

You need the actual æbleskiver pan with the seven wells. A regular frying pan cannot make these. Look for cast iron at IKEA, John Lewis, or any Nordic kitchen shop. Substitutes fail.
